CARIBBEAN CUISINE

GREEN FIG SOUSE - Serves 4

INGEDIENTS

10 green figs
cup chopped seasoning peppers
chopped chives
cup chopped chadon beni (cilantro)
chopped onion
1 clove of garlic, chopped
1 cup black olives
1 cup green olives

DRESSING

3 tablespoons olive oil
3 tablespoons lime juice
1 tablespoon vinegar
1 teaspoon salt
1/2 teaspoon black pepper

DIRECTIONS

1. Cut the tips off both ends of the green figs. Keep the skins on.

2. Place in boiling salted water, reduce the heat to simmer, cover and cook until the skins begin to split and the green figs are tender.

3. Remove from the water and cool.

4. Cut the green figs into 1/2 " pieces and add the seasoning peppers, chives, chadon beni, onions and olives.

5. Blend all dressing ingredients together and toss into the green fig mixture

6. Serve cold.
