CARIBBEAN CUISINE
STUFFED YAM AND CRAB IN WHITE WINE SAUCE
Serves 4-6
INGREDIENTS
FOR THE CRAB AND YAM
1 lb (450g) crab meat
1 tablespoon olive oil
1 clove of garlic, chopped
2 tablespoons chopped chives
2 tablespoons lime juice
1 teaspoon salt
1/2 teaspoon black pepper
2 large yams
WHITE WINE SAUCE
2 tablespoons butter
2 tablespoons flour
3/4 cup milk
1/2 cup white wine
1/2 teaspoon salt
1/4teaspoon black pepper
1. Wash yams well.
2. Place in boiling salted water, cover, reduce the heat to a simmer and cook until tender.
3. Once cooked, remove yams from water, cool them and remove their skins.
4. Mash yams.
5. Season the crab meat with lime, salt and pepper.
6. Over a medium heat, melt the butter in a saucepan. Remove from heat and stir in the flour until blended.
7. Stir in the milk a couple of tablespoons at a time until mixture is smooth.
8. Place back on the heat stirring constantly. Add salt and pepper.
9. When the mixture has thickened, add the wine and continue to stir on the heat until thick.
10. Blend the wine sauce with the mashed yams.
11. Heat the olive oil and toss in the crab meat. Stir in garlic, chives and seasoning peppers.
12. When the crab is cooked, remove from heat and add to the yam mixture.
13. Place the mixture into crab shells or a casserole dish. Sprinkle with parmesan cheese and grill until brown. |
